Whenever I bring my taco dip to a party, it is a hit. It is very easy to make, and it is vegetarian-friendly. The recipe is below.
Ingredients:
-2 x 8oz packages of cream cheese
-16oz sour cream
-Taco seasoning packet
-Lettuce (shredded)
-3 tomatoes
-Approximately 2 cups shredded sharp cheddar cheese
-Olives and jalepenos are optional
1) Mix cream cheese, sour cream, and contents of taco seasoning packet. Spread mixture in rectangular foil or Pyrex container. It is best if you do this step the night before the party so that this layer can solidify in the fridge overnight.
2) The following day (or same day if you don't have time), sprinkle the shredded lettuce over the cream cheese- sour cream mixture.
3) Dice the tomatoes and spread evenly on top of lettuce. If you wish to add jalepenos or olives, you can spread them out as well.
4) Top with 1.5-2.0 cups of shredded sharp cheddar cheese (depending on how cheesy you would like the dip to be).
5) Serve with tortilla chips. Make sure to keep refrigerated until it's ready to be served.

The Best Buffalo Chicken Dip Recipe
Whenever I make buffalo chicken dip, people seem to ask what the recipe is (because it is really the best recipe that I have found to date). Below, find the extremely easy recipe for an awesome dip that will be sure to get a great reaction at parties.
(194 Cal per 1/4 cup serving)
Ingredients:
~1 lb boneless skinless chicken breast (approximately 2-3 large chicken breasts)
~1 cup ranch dressing
~1 cup Frank's Original Red Hot (should not be substituted)
~1 8-oz block of cream cheese (you can use 1/3 less fat, but do not use fat free)
~1 package of fancy shredded sharp cheddar cheese (2 cups)
Instructions:
1) Preheat oven to 350 degrees F
2) Boil chicken breasts on stove until cooked all the way through. (I tend to cut mine before boiling because this reduces the cooking time)
3)While the chicken is boiling, cut the cold cream cheese into cubes (12 cubes works well for me) and place into an 11.5"x 8" x 2" Pyrex style baking dish lightly misted with butter flavor Pam
4) Evenly sprinkle the cheddar cheese on top of the cream cheese cubes.
5) Pour 1 cup of ranch and 1 cup of Franks Red Hot on top of the cheesy mixture and place the dish into the oven uncovered for 7-10 min.
6) Stir the mixture and put back into the oven to bake for an additional 7-10 minutes.
7) While the mixture is baking, shred the boiled chicken (after cooling of course. I usually run cold water over the chicken to speed up the cooling process).
8) After the cheesy mixture is done baking and well mixed, you should add the chicken. Pour the chicken on top of the mixture and carefully stir the chicken in. Cover the container with aluminum foil and bake for an additional 20-30 min.

First Sunday and upcoming sales
This week's sales were not that great, but definitely look for sale and coupon comparisons for next week's sales. July 4 sales are usually pretty decent, and based on the Shop Rite and Target circulars, there should be plenty of good deals next week.
For those of you in the Philadelphia area, this Sunday is First Sunday at the Philadelphia Museum of Art. The first Sunday of each month, the museum allows you to pay whatever you would like for entry.

Great low calorie dinner- Vegetable and Rice Burritos
I have Cooking Light magazine delivered to my house every month (thanks to Matt- I got it as a birthday present last year). The magazine often features low calorie versions of popular foods, such as mac and cheese and burgers in addition to some more high brow fare (salads with veggies and nuts for example, lot of fish recipes, and they really seem to love gruyere cheese). The magazine usually has 20-30 recipes in it, of which 1-5 are vegetarian (because, let's face it, most people eat meat). As most of you know, Matt is a vegetarian, so we usually eat vegetarian fare because it doesn't make sense to cook two separate dinners (although you can bet that I eat meat most of the times that we go out to eat!).
I clipped a recipe for vegetable and rice burritos with quesadilla cheese out of May 2012's Cooking Light, and we ate it for dinner this evening. The recipe isn't really classic Mexican- closer to what you would get if you ordered a veggie burrito in a pub, but it was still really good. I added some chili powder, cayenne pepper, and cumin to Matt's (because he prefers spicy food), but made mine without. Also, we substituted brown rice for white rice and sharp cheddar for quesadilla cheese (because that's what we had in the house). The meal can be made for under $15 and if paired with a hearty salad can easily be a light summer dinner (each burrito is about 380 cal).
